Try These Avocado Egg Boats

Ingredients:

  • 2 pitted and halved ripe avocados
  • 4 eggs
  • Pinch of kosher salt
  • Ground black pepper
  • 3 slices bacon
  • Chopped chives to use for garnish

Instructions

  • Preheat oven to 425. Place avocados in a baking dish.
  • Carefully crack eggs in a bowl and transfer yolks into each avocado half, then fill in as may egg whites as you can
  • Season with salt and pepper and cook until egg whites are set and yolk is no longer runny (approx. 15min) If avocado starts to brown, cover with foil
  • In large skillet cook bacon over medium heat, cook bacon until crisp. When cooked, chop up bacon into small bits
  • Top avocados with chopped bacon and chives
